For campers, nothing perks up the mood quite like a hearty breakfast. And while it’s tempting to just grab some muffins or cereal and call it a day, consider shaking things up by throwing together this nutritious and delicious meal. After you read this post, you’ll have an easy-to-follow recipe for bacon fried rice that will help your campers fuel up for the day!
The first thing you need is a green bell pepper. Slice it up very thinly and chop it into small pieces. Then cut up a large carrot into thin, coin-sized pieces.
Slice up some green onions, making sure to separate the green and white parts. Chop the white parts into small pieces but leave the greens whole.
Slice a thumb-sized piece of fresh ginger root into coins (no need to peel it!). Trim the fat off of a pound-and-a-half of bacon, making sure to leave as much meat on as possible.
Place a large frying pan over high heat. For this recipe, you’ll need to use a wok-type pan. When the pan is hot, add the bacon and cook it until it’s browned. If you have an electric stove, turn it down to medium as soon as you add the bacon so that it can cook through. If your stove runs cool (most do), let the bacon cook until it’s crispy before turning your burner down.
Once the bacon is browned, transfer it to a bowl and set it aside. You’ll use it in a minute.
Next, add some oil to your wok-type pan and wait for it to heat up. Then add the garlic cloves and ginger coins. Stir them around for about 30 seconds before adding the carrots, bell pepper, white parts of your green onions (reserving the green parts for later), and scrambled egg mix from a package of frozen breakfast mix (like this one).
Stir the ingredients around for a minute until they’re evenly combined. Then add the green onions, scrambled egg mix, soy sauce, and pepper (I used pepper flakes because I didn’t have any freshly ground black pepper). Continue stirring over medium heat until everything is well-combined.
Finally, add your crispy bacon pieces and stir them into the rest of the ingredients. If you used frozen breakfast mix to make your scrambled eggs, be careful not to add too much of the liquid it came with or your rice will become soupy.
Once all ingredients are combined, add your bacon fried rice to a bowl or plate and top with chopped green onions and sesame seeds. Bam! You’re done!
While this meal is a little different than your run-of-the-mill bacon and eggs, it’s quick and delicious. And since it involves making fried rice, it’s just as easy to make as any other breakfast dish. Best of all, virtually everything in it is made from scratch, ensuring that your campers are fueled up by something nutritious and tasty.
